This is achieved after salt curing and slowly smoking our salmon in kilns fired with whole river red gum logs for up to 40 hours, in the traditional way.

With each long slice being fully trimmed, it allows for creative and precise presentation.

So it’s as fresh, succulent and wonderfully flavoursome as the moment it was harvested.
