HUON Cold Smoked Salmon Rice Paper Roll

Ingredients

  • 200 grams HUON cold smoked salmon
  • 6 x Rice paper discs
  • 2 x Julienne spring onions
  • 1 x Julienne carrot and ½ julienne capsicum
  • Snow pea sprouts
  • 1 x finely sliced red onion
  • ¼ cup Light soy and 1 tblsp brown sugar mixed together

Method

Put rice paper into a bowl of water and soak for 10 mins. Marinate all the vegetables in the soy, brown sugar mixture for 10 mins. Place a rice paper disc on a board and lay sliced cold smoked salmon down the centre. Lay the marinated vegetables on top of the HUON salmon and fold the rice paper into a roll. Tie a length of spring onion around it for the authentic look. Serve with some of the soy mixture as a dipping sauce.
