Thai salad with HUON Hot Smoked Salmon

Ingredients

  • 2 x 150g HUON Sweet Chilli Hot Smoked Salmon portions
  • 1 small red capsicum, 1 carrot and
  • 1 cucumber, all julienne sliced
  • ¼ chinese cabbage, thinly sliced
  • ½ red onion, fi nely sliced
  • ½ cup bean shoots
  • 1 handful snow pea sprouts
  • ½ bunch coriander
  • ½ cup spicy peanuts
Dressing:
  • ¼ cup light soy, tbsp fish sauce,
  • 1 tbsp palm sugar,
  • 2 tbsp sweet chilli sauce and ¼ cup lime juice, combined.

Method

  1. Place all the ingredients into a bowl except the peanuts, and toss with the dressing.
  2. Place into a serving bowl and garnish with some extra coriander and spiced peanuts.
Serves 4
