Herb crusted HUON salmon steak

Ingredients

  • Fresh HUON salmon portions 1 per person
  • Fresh breadcrumbs 1/3 cup per person
  • Chopped parsley1 tblsp per person
  • Chopped lemon thyme 1 tblsp per person
  • Lemon zest to taste
  • Diced kalamata olives1 tblsp per person
  • Extra virgin olive oil

Method

Brush HUON salmon portions with the olive oil and season with salt and pepper. Into a mixing bowl place all the other ingredients and moisten with a little of the olive oil, combine together. Place on top of the HUON salmon portion and press down firmly. Put into a hot oven, 200 cel for 15mins, or till a skewer passes easily through the fish. Serve with garden salad.
