HUON Fresh Salmon Fillet on Pastry with Guacamole

Ingredients

  • 1 piece per person, fresh HUON salmon portion, approx 180 grams
  • ½ avocado per person
  • Fresh-diced chives
  • Lemon juice to taste
  • Cooked rectangular pieces of puff pastry, 1 per person
  • Finely diced red capsicum to garnish
  • Italian parsley to garnish

Method

Take the baked pieces of puff pastry and place on a plate. Take a piece of salmon to fit the pastry and season, then grill until cooked, place on top of the pastry. Make the guacamole by mashing the avocado with the chives and lemon juice, season. Spoon the guacamole on top of the salmon and garnish with the diced capsicum and a sprig of parsley.
