Hot Smoked HUON Salmon and Pasta Bake
Ingredients
- 300 grams Flaked HUON hot smoked salmon
- 1 packet cooked penne pasta
- 500mls Light Milk
- Can of diced tomatoes
- 1 bunch Fresh chopped basil
- 1/3 cup of Flour mixed with extra virgin olive oil (like a roux)
- 1 cup Breadcrumbs mixed with EVOO, ½ cup grated parmesan and 1 tsp hot paprika
Method
Put the milk in a pot on the stove and bring to the simmer. Thicken with the flour and oil mixture, and lower the heat. Cook for a further 3-4 minutes. Season. This makes a healthy béchamel. Place all the other ingredients except the breadcrumbs, in a bowl and add the béchamel and mix together. Put into an ovenproof dish and garnish the top with the breadcrumb mixture.
Bake in a 170-cel oven till the top is nicely browned.
