With all our borders closed but local restrictions starting to ease, we asked our staff what their favourite destinations have been to help us dream of one day travelling again, but also how we could make a mini escape to experience the cuisine either in our home, or at a local restaurant.

Pene our Corporate Communications and Community Relations Manager’s favourite destination is… New York!

Why did you love this destination?

People everywhere, doing weird and wonderful things!

What would you recommend someone do in this destination?

Hire a bike in Central Park and spend the day riding; through the park, out into neighbouring suburbs like Harlem!

What is the cuisine of this destination?

Some would say fast food! But you can get amazing Italian, Jewish, Irish – every nationality

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

Any glazed Huon Salmon recipes remind me of the variation of this city.   Plus the locals love their “butters” and so our grilled salmon with anchovy butter recipe hits the spot…Delicious


Stuart our Work Health & Safety Manager ‘s favourite destination is… Copenhagen, Denmark!

Why did you love this destination?

It epitomised Northern European Culture. The people were ultra-friendly and the architecture reminded me of strolling through  Salamanca.

What would you recommend someone do in this destination?

Definitely do the Canal cruise!

What is the cuisine of this destination?

Typical European with a big emphasis on Café dining.

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

The Huon Caesar Salad reminded me of a lunch that I had in the iconic Tivoli Gardens, smack bang in the middle of the city.

Rockwall Bar and Grill in Hobart reminds me of the architecture and ambiance of Kobenhavn


Emily our Communications Coordinator ‘s favourite destination is… Granada, Spain!

Why did you love this destination?

I loved the cultural melting pot that is Granada’s middle-eastern past met with its Spanish/middle European present. The colours, music and flavours are all the things I love about experiences new places.

What would you recommend someone do in this destination?

Visit one of the city’s underground Flamenco bars for a life-changing performance and delicious spicy paella.

What is the cuisine of this destination?

Spanish with a middle-eastern influence.

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

Spanish cuisine is all about championing fresh, vibrant flavours. Josh Matthewson’s recipe for Huon Salmon with Roasted Red Onion & Capsicum Ragout and Grape, Currant & Pinenut Salsa reminds me of Granada.


Lindsay our Forest Home Hatchery Manager’s favourite destination is… Solomon Islands!

Why did you love this destination?

We stayed in a remote village in the western province and immersed ourselves in an island lifestyle and culture of subsistence living.

What would you recommend someone do in this destination?

Spend time in a small village.

What is the cuisine of this destination?

Very basic, asian style. fish, coconuts, fruit, and veg.

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

Fishing was a daily occurrence to provide food for us and the village. Although no salmon available we had tuna sashimi!


Leigh our Assistant Manager of Farm Operations’s favourite destination is… Tokyo!

Why did you love this destination?

I love Japanese culture, the architecture and share their love of technology.

What would you recommend someone do in this destination?

Climb to the top of My Fuji then, wander around Akihabara and buy some vintage video games.

What is the cuisine of this destination?

Lots of ramen, miso soup, tempura and of course sushi.

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

While I’m not the most adventurist of eaters, I did have a delicious ramen that looked a lot like the hot smoked Ocean Trout ramen noodle salad.

I did have the most amazing McGriddle from McDonalds which is bacon, egg, hash brown, cheese and two maple flavoured pancakes as the buns, so I always think of that when I go into a Maccas here…


Terri our NSW Business Development Manager’s favourite destination is… Maldives!

Why did you love this destination?

Diving, the clearest water, very friendly people, delicious food

What would you recommend someone do in this destination?

Dive, explore the relatively small but beautiful main island and island hop between the many, many island resorts.

What is the cuisine of this destination?

Seafood with Indian/Sri Lankan flavours.

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

Sashimi was plentiful and on every menu at all the resorts, so Sydney Cove Oyster Bar, by the ocean near the Opera House, Circular Quay.


Jack our Application & IT Support Officer’s favourite destination is… Ayutthaya!

Why did you love this destination?

Historical temples, monasteries and statues.

What would you recommend someone do in this destination?

Rent a bike then cycling in the city.

What is the cuisine of this destination?

Thai traditional food is full of local spices, like tom yum.

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

One Tray Thai Salmon reminds me of the taste of Thailand spices.

In Hobart, the Royal Thai Restaurant helps me reminiscence.


Carmen our Customer Service Manager’s favourite destination is… Norway!

Why did you love this destination?

Absolutely breath-taking scenery, and the amount of music and culture that is everywhere.

What would you recommend someone do in this destination?

The Pulpit Rock.  (Preikestolen is a steep cliff which rises 604 metres (1,982 ft) above the Lysefjorden. Atop the cliff, there is an almost flat top of approximately 25 by 25 metres (82 ft × 82 ft) with no safety fence!)

What is the cuisine of this destination?

There’s a strong focus on game and fish, however Kjottboller (meatballs) and Lefse (flatbread) are two that leap to mind

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

Smoked salmon is a staple over there, so Huon Premium Cold Smoked Salmon with creamy scrambled eggs and chives is a nice reminder!

I suppose Ikea Restaurant with Swedish Meatballs is about as close as you can get? No offense intended.  Otherwise a general pub meal in Tassie is reminiscent of a pub meal in Norway.

Why did you love this destination?

People, culture, snowboarding, hunting, diving

What would you recommend someone do in this destination?

Snowboard Lake Louise or visit the Calgary Stampede

What is the cuisine of this destination?

Salmon, red meat very different depending on what part of Canada you are in!

Is there a recipe or place you go to eat food that makes you reminiscence of this destination?

Huon’s BBQ Salmon cooked on a cedar plank with lemon and dill recipe reminds me of Canada.
