Baked Salmon and Cheese Omelette

  • 200g Huon Cold Smoked Salmon
  • 1 knob butter
  • splash olive oil
  • 3 cups baby spinach
  • 2 cups cooked potatoes, loosely crushed
  • 8 eggs
  • 200g feta cheese, crumbled
  • 1/2 cup cheddar cheese, grated
  • 3 tbsp chives, chopped
  • crusty bread to serve

    Preheat oven to 200C

    Melt butter and olive oil in a large oven proof frying pan on medium heat. Add spinach and toss until wilted. Add potatoes and stir.

    In a large bowl, beat together the eggs and season. Scatter the salmon and feta around the fry-pan then pour over the egg. Top with grated cheddar.

    Bake in the oven for 10 – 15 minutes until egg is just set.

    Remove from oven and scatter chives on top. Serve with crusty bread.
