Hot Smoked Huon Salmon, Anchovy and Broccoli Pasta

Macaroni has never been so delicious, quick and healthy. Great as a mid-week meal for yourself or the family, this pasta dish includes the comfort of pasta, cheese and bacon, but the nutrients of salmon and broccoli.

Being a simple and clean dish, make sure to cook the ingredients to just al dente or translucency to ensure they retain their nutrients and flavour.

Hot Smoked Huon Salmon, Anchovy and Broccoli Pasta

Ingredients

  • 1 Huon Premium Wood Roasted Salmon 150g
  • 200g macaroni
  • 1/2 head diced raw broccoli
  • 3 anchovies, roughly chopped
  • 1 onion, diced
  • 3 bacon rashers, diced
  • 3 tbsp sour cream
  • Juice of 1 lemon
  • 1/2 bunch of parsley (curly or flat leaf)
  • Olive Oil
  • Parmesan
  • Salt
  • Pepper

Method

    Cook macaroni to al dente per packet instructions. Drain and refresh in cold water, and sit to the side.

    In a fry pan, heat olive oil over a medium heat. Add onion and garlic, and cook until translucent.

    Add bacon to the fry pan and cook until soft (we do not want to create colour in order to retain nutrients and flavour).
    Add anchovies and diced broccoli and cook for 2 minutes. Turn off heat.

    Mix through the cooked macaroni and sour cream. Season with salt and pepper to taste. Dress with lemon juice and parsley.

    Break up the hot smoked salmon portion into chunks and softly mix into pasta.

    Serve into bowls and top with grated parmesan.
