- 300g Huon Premium Hot Smoked Salmon broken into 2cm pieces
- 500g large spiral pasta
- 200g spinach
- 200g feta, crumbled
- 2 cups grated cheddar
- 600ml thickened cream
- 3 eggs
- 1/2 tsp grated nutmeg
- To taste salt and pepper
- 2 cups coarse white breadcrumbs
- 50g unsalted butter
Cook the pasta until just done, strain, rinse in cold water and drain.
Combine together the pasta, spinach, feta, half the cheddar and all the salmon.
Whisk together the cream and eggs then combine in the seasoning, nutmeg and pasta mix.
Place into an oiled oven proof dish and scatter the top with the breadcrumbs, cheese and small knobs of butter.
Bake for 35 minutes or until golden and set.
