Huon Salmon Quiche Cakes

We talk about quick and easy a lot but that’s how we like it and these quiche cakes tick the box!
Enjoy them warm or even cold as a snack on the go, these quiche cakes can be made ahead of time and even frozen to be heated up later on.
Just double the recipe ingredients to increase the amount of servings!

Huon Salmon Quiche Cakes

  • 100g Huon Cold Smoked Salmon
  • 1/2 Cup grated zucchini
  • 100g Crumbled fetta
  • 2 Free range eggs
  • 1/2 Cup self raising flour
  • 1/3 Cup full cream milk

    Pre heat oven to 180 degrees C

    Combine eggs, milk, flour and feta with the grated zucchini

  3. 3

    Line each of four muffin tins with slices of Huon Cold Smoked Salmon

  4. 4

    Pour the egg mixture into each muffin tin and bake for 15 minutes or until Quiche Cakes are firm and golden brown

    Let cool for 5 minutes and carefully remove from the muffin tins. Serve with salad or enjoy cold the next day!
