This is a great dish that is quick and easy to make but will also keep in the fridge for 1-2 days making it a great option to take to work for lunch or double the ingredient quantities to make an even large serving to share at with friends.
Gently break up the Huon Hot Smoked Salmon into bite size pieces
Heat a large frypan with the rice bran oil and toast pine nuts until golden. Add Hot Smoked Salmon.
Meanwhile wash and dry the zucchini and using a julienne or speed peeler make noodles or ribbons
Reduce the heat and add zucchini noodles, shaved parmesan, basil leaves and juice and zest of the lemon and gently toss together
Serve with extra flaked salmon and parmesan as desired
