Huon Wood Roasted Salmon with Zucchini Noodles

This is a great dish that is quick and easy to make but will also keep in the fridge for 1-2 days making it a great option to take to work for lunch or double the ingredient quantities to make an even large serving to share at with friends.

Huon Wood Roasted Salmon with Zucchini Noodles

  • 2 X 150g Huon Wood Roasted Salmon
  • 2 Tbsp Pine nuts
  • 1/2 Cup Basil Leaves
  • 1/4 Cup Parmesan (shaved)
  • 1 Tbsp Rice Bran Oil
  • 3 Zucchini (medium)
  • 1 Lemon (Zest and Juice

    Gently break up the Huon Hot Smoked Salmon into bite size pieces

    Heat a large frypan with the rice bran oil and toast pine nuts until golden. Add Hot Smoked Salmon.

    Meanwhile wash and dry the zucchini and using a julienne or speed peeler make noodles or ribbons

    Reduce the heat and add zucchini noodles, shaved parmesan, basil leaves and juice and zest of the lemon and gently toss together

    Serve with extra flaked salmon and parmesan as desired

I cooked this meal tonight with a side of rice. I’m not a big eater of any seafood, but I thoroughly enjoyed this meal and plan on making it again. Thank you.
