Huon Salmon Burrito Bowl

Ingredients
- 10 cherry tomatoes, chopped
- 1 cucumber, diced
- 1 red onion, diced
- 1 cup mixed grains
- 2 tbsp olive oil
- 1 lemon cheek, juice
- 1/2 tsp salt
- 2 tbsp sour cream
- 2 tbsp chipotle sauce
- 5 sprigs basil
- 150g Huon Wood Roasted Salmon

Add tomatoes, cucumber, red onion, mixed grains, a drizzle of oil, lemon juice and a pinch of salt to a bowl and mix together well.

Tear up salmon and add into bowl and mix together well and serve up with sour cream, chipotle and basil over the top.
