Ingredients

  • 150g Huon Hot Smoked Salmon
  • 2tbsp olive oil
  • 2 onions, sliced
  • 1 small green capsicum, diced
  • 1 small red capsicum, diced
  • 1 small yellow capsicum, diced
  • 8 tortillas
  • MARINADE
  • 3 limes, juice and zest
  • 30g palm sugar, grated
  • 2 cloves garlic, sliced
  • 2tsp dried oregano
  • 2tsp dried thyme
  • 1tsp cayenne pepper
  • 1tsp of cumin
  • 1 shallot, finely diced
  • 1 tbsp olive oil
  • Salt and pepper to season

Method

    To make the Marinade mix together all the marinade ingredients. Coat the Huon Smoked Salmon in the marinade and leave it in the fridge for 30 mins.

    Heat 2 tablespoons of olive oil in a large frying pan. Saute onions and capsicums for 5 minutes. Add salmon and marinade and simmer for another 5 minutes.

    Warm tortillas in a dry frying pan. Spoon some of the fajita mix down the middle of each tortilla and serve.
