Huon Salmon Tartare

  • 1/2 cup Huon Salmon Signature Cut Loin, diced
  • 1 tbsp purple shallots, diced
  • 1 tbsp red chili, diced
  • 1 tbsp cucumber, diced
  • 1 tbsp gherkins, diced
  • 1 tbsp capers, diced
  • 1 tbsp lemon oil
  • Juice of 1/2 a lemon
  • Pinch of Tasman Sea Salt
  • 2 radishes, thinly sliced
  • Fresh dill, to garnish

    Place salmon, shallots, chilli, cucumber, gherkins and capers in a bowl and stir. Dress with lemon oil and lemon juice, season with salt.

    To Serve

    Place radish rounds on a plate, spoon salmon mixture on top. Garnish with fresh dill.
