- 2 Huon Ocean Trout portions (skin on)
- 1 tsp smoked paprika
- 1 tsp chili flakes
- Pinch salt
- ¼ cup pitted green olives
- Juice of 1 lemon
- Small bunch coriander
- Small bunch parsley
- Olive oil for drizzling
- Baking paper
- Aluminum foil
Pre-heat oven to 180°C.
Place 2 pieces of foil on the bench, then top with baking paper.
Place 1 portion of ocean trout on each of the parcels.
Add spices, olives, lemon juice, some of the herbs (save some herbs for later), then top with a piece of baking paper then a piece of foil and seal off the parcels.
Cook in oven for approximately 10 minutes.
Drizzle olive oil and add some of the left-over fresh herbs to serve.
