Huon Hot Smoked and Cucumber Tea Sandwiches

Ingredients

  • 12 slices Fresh wholemeal sandwich bread
  • 8 slices Fresh white sandwich bread
  • 250g Philadelphia spreadable cream cheese
  • 1/4 cup Chopped dill, extra sprigs to garnish
  • 1/4 cup Chopped chives, extra to garnish - not chopped
  • 2 Continental cucumbers
  • 100g Baby rocket
  • 250g Huon Hot Smoked salmon, skin removed
  • 1tsp Lemon zest
  • Salt and freshly cracked black pepper

Method

    Mix half the cream cheese with dill, chives, and lemon zest. Season with black pepper.

    Thinly slice one cucumber lengthways with a mandolin; slice the rest into rounds.

    Flake the smoked salmon in a bowl - don't overmix; keep it chunky.

    Spread herbed cream cheese on 4 wholemeal bread slices. Add rocket and half the salmon.

    Spread plain cream cheese on 4 white bread slices. Place on top (cream cheese side down), then layer with cucumber slices.

    Trim crusts and cut into triangles or batons.

    Repeat:

    Spread herbed cream cheese and rocket on 4 wholemeal slices.

    Spread herbed cream cheese on 4 white slices, place on top, add remaining salmon.

    Spread plain cream cheese on 4 more wholemeal slices and top with cucumber rounds.

    Season with salt and pepper.

    Use a small cookie cutter to cut circles from each sandwich if desired.
