Mexican Huon Salmon Salad

Ingredients

  • 280g Huon Salmon - Skin off, cut into 140g portions
  • 4 tbsp Extra Virgin Olive Oil
  • 1 tsp Mexican Seasoning
  • 1/2 cup corn kernels
  • 2 handfuls Cos Lettuce Leaves, Roughly Chopped
  • 1 Vine Ripened Tomatoes, Diced
  • 1 Avocado
  • 2 handfuls Corn Chips
  • 2 tbsp Lime Juice
  • 2 tbsp Sour Cream

Method

    Brush Salmon portions with oil then sprinkle with the Mexican seasoning

    Heat a medium frypan on high and drizzle with 1 tbsp. olive oil.

    Season salmon add to the frypan, reduce heat to medium.

    Cook salmon 2 minutes each side or until lightly golden brown.

    Place lettuce in 2 serving bowls. Top with corn, tomato and avocado Arrange corn chips on the side

    Whisk lime juice and olive oil in a small bowl, season to taste then drizzle over salad.

    Break up salmon and pile on top of the salad.

    Top with a dollop of sour cream. Sprinkle with extra Mexican seasoning.
