Sticky Chilli Huon Salmon
This versatile sticky chilli Huon Salmon can be served with a side of salad, or added to a brioche slider.

Ingredients
- 1 tbsp cooking oil
- 6 long chillies, thinly sliced
- 6 garlic cloves, thinly sliced
- 2cm ginger, thinly sliced
- 3/4 cup sugar
- 1 Fresh Huon Salmon side
- Small bunch coriander

Add oil to a small saucepan, add chillies, garlic, ginger and pinch of salt and cook on high heat for 4 minutes. When cooked through add sugar and ¾ cup water cook on medium heat until half the volume.

Place Huon Salmon on baking tray. Baste with chilli sauce bake in pre-heated 160 degree oven. After 10 minutes take out of oven and baste agian. Return to oven for 10 minutes

To serve, cover Huon Salmon with the rest of the chilli sauce and scatter coriander leaves on top.
