Hot Smoked Salmon Salad

Ingredients
- 150g Hot Smoked Huon Salmon, flaked
- 2 hardboiled eggs, halved
- 4 rashers streaky bacon
- 1 cos lettuce, cut into wedges
- 4 asparagus spears, sliced
- 4 slices sourdough, charred and chopped into large croutons
- DRESSING
- 3tbsp horseradish
- 1 cup sour cream
- 1/4 cup baby capers
- 1/4 bunch bunch of parsley, chopped
- 5 gherkins, diced
- 1 shallot, finely diced
- 1 lemon, juiced
- salt to season

To make the dressing mix all the dressing ingredients until well combined

Combine all the salad ingredients together in a large bowl and dress with the horseradish dressing
