Hot Smoked Salmon Salad

  • 150g Hot Smoked Huon Salmon, flaked
  • 2 hardboiled eggs, halved
  • 4 rashers streaky bacon
  • 1 cos lettuce, cut into wedges
  • 4 asparagus spears, sliced
  • 4 slices sourdough, charred and chopped into large croutons
  • DRESSING
  • 3tbsp horseradish
  • 1 cup sour cream
  • 1/4 cup baby capers
  • 1/4 bunch bunch of parsley, chopped
  • 5 gherkins, diced
  • 1 shallot, finely diced
  • 1 lemon, juiced
  • salt to season

    To make the dressing mix all the dressing ingredients until well combined

    Combine all the salad ingredients together in a large bowl and dress with the horseradish dressing
