Huon Salmon Poke Bowl

A trend that has made its way recently to Australia’s shores from Hawaii, the poke bowl isn’t going anywhere soon and with good reason! Scott Gooding gives us his take on this fresh and fun favourite among those of us wanting our meal to look and taste good while being good for us!

  • 1 140g Fresh Huon Salmon portion - poached and pulled apart
  • 1/2 Avo - sliced
  • 1 Carrot - Grated/chopped
  • 1/4 Cucumber - Chopped
  • 1/4 Red Cabbage - Finely chopped
  • 1/4 bunch Coriander -roughly chopped
  • 1 long red0/green chilli - finely chopped
  • Handful Loose lettuce leaves
  • 1 tbsp Sesame Seeds
  • Dressing
  • 1 Garlic Cloves - Finely chopped
  • 1cm Ginger - FInely chopped
  • 2 Limes - Juiced
  • 1 tsp Fish Sauce
  • 1/2 tsp Honey
