Oven Baked Salmon with Chilli, Ginger, Garlic and Lime

  • 1 x 280g pack Huon Salmon portions, skin on
  • ½ tsp chilli flakes
  • 2 cloves garlic, finely chopped
  • 1 tbsp minced ginger
  • 1 tbsp sweet paprika
  • 1 tsp grated lime zest
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp sugar
  • ½ - 1 tsp salt (to taste)
  • To serve
  • 250g green beans, cooked
  • handful of coriander leaves
  • steamed rice

    Preheat 220°C (200°C fan-forced)

    In a small bowl, mix together chilli, garlic, ginger, paprika, lime zest, olive oil, lime juice and sugar. Add the salt and check for seasoning.

    Place salmon on a baking tray lined with baking paper.

    Spoon the chilli garlic mix over the salmon making sure each side is covered.

    Bake in the preheated oven for 10 -15 minutes.

    Remove from the oven and serve with rice and green beans.

    Spoon any pan juices over the rice and scatter the coriander leaves over the top.
